harissa pork with herbed couscous

  • 1 cup cooked couscous
  • 1 small red onion 
  • ¼ cup mint leaves 
  • ¼ cup chopped chives 
  • 1 x 350g pork fillet, trimmed 
  • 1 teaspoon store-bought harissa+
  1. Place the couscous, onion, mint and chives in a bowl and toss to combine. Set aside.
  2. Brush the pork with harissa. Heat a char-grill or barbecue over high heat and char-grill or barbecue the pork for 4–5 minutes each side or until cooked through. Slice and serve with the couscous. Serves 4.
