roasted baby tomatoes and beans

  • 600g green beans, trimmed
  • 500g truss baby Roma tomatoes 
  • 8 sprigs lemon thyme 
  • 2 cloves garlic, crushed 
  • 2 tablespoons lemon-flavoured olive oil 
  • 1 tablespoon white wine vinegar
  1. Preheat oven to 200ºC (400ºF). Place the beans, tomatoes, lemon thyme and garlic on a baking tray. 
  2. Drizzle with oil and vinegar and roast for 4–5 minutes or until beans are tender. Serves 4–6.
