coffee and date porridge

  • 1½ cups (135g) rolled oats
  • 1 teaspoon instant coffee granules 
  • 3 cups (750ml) water
  • 1 teaspoon vanilla bean paste
  • 2 tablespoons maple syrup, plus extra to serve
  • ¼ cup (60ml) single (pouring) cream, plus extra to serve 
  • 12 fresh dates, pitted and chopped 
  1. Place the oats, coffee, water, vanilla and maple syrup in a medium saucepan over high heat and stir to combine. Bring to the boil and reduce heat to low. Cook, stirring occasionally, for 2–3 minutes or until the oats are cooked through. Stir through the cream. Divide between cups or bowls and serve with dates, extra cream and maple syrup. Serves 4

Yum!  Two of most favorite things in the world…coffee and dates.  This would definitely start (or end) my day beautifully
