wholewheat spaghetti
with cavolo nero, pesto and goat’s curd
- 3 cups (300g) chopped cavolo nero (Tuscan kale)
- 2 cloves garlic, chopped
- 1 cup flat-leaf parsley leaves
- ½ cup (50g) toasted walnuts
- ¼ cup (60ml) extra virgin olive oil
- 2 tablespoons lemon juice
- sea salt and cracked black pepper
- 400g wholewheat spaghetti
- 200g goat’s curd
- micro (baby) parsley leaves, to serve
- Place the cavolo nero in a colander and pour over boiling water. Set aside to cool slightly.
- Using your hands, squeeze out any excess water. Place the cavolo nero in a food processor with the garlic, flat-leaf parsley, walnuts, oil, lemon juice, salt and pepper, and process until smooth.
- Cook the spaghetti in a large saucepan of salted boiling water for 6–8 minutes or until al dente. Drain. Toss the pesto through the pasta and divide between bowls. Top with the goat’s curd and micro parsley to serve. Serves 4
