harissa pork with herbed couscous
- 1 cup cooked couscous
- 1 small red onion
- ¼ cup mint leaves
- ¼ cup chopped chives
- 1 x 350g pork fillet, trimmed
- 1 teaspoon store-bought harissa+
- Place the couscous, onion, mint and chives in a bowl and toss to combine. Set aside.
- Brush the pork with harissa. Heat a char-grill or barbecue over high heat and char-grill or barbecue the pork for 4–5 minutes each side or until cooked through. Slice and serve with the couscous. Serves 4.
