honey and lemon thyme roasted carrots

  • 500g heirloom carrots, peeled and trimmed
  • 2 tablespoons extra virgin olive oil 
  • ¼ cup (60ml) honey 
  • 1 tablespoon lemon juice 
  • 6 sprigs lemon thyme 
  • sea salt and cracked black pepper
  1. Preheat oven to 200°C (400°F). Place the carrots on a large baking tray with the oil, honey, lemon juice, thyme, salt and pepper and toss to combine.
  2. Roast for 30 minutes or until the carrots are tender. Serves 2.
