fresh chilli sauce
- 4 long red chillies, chopped
- 3 cloves garlic, peeled
- 1 cup coriander (cilantro) leaves
- ½ cup (135g) grated palm sugar
- ⅓ cup (80ml) fish sauce
- 1 cup (250ml) lime juice, (about 4 limes)
- 1 x 5cm piece (25g) ginger, peeled and sliced
- Place the chillies, garlic, coriander, sugar, fish sauce, lime juice and ginger in the bowl of a food processor. Process for 1–2 minutes or until well combined. Makes 2 cups

Love this recipe & it keeps well. However I don’t particularly like Fish sauce so I always halve the quantity - still tastes delicious
