laksa paste

  • 6 large red chillies seeds removed and chopped
  • 2 teaspoons dried shrimp paste* 
  • ⅓ cup dried prawns (shrimp) 
  • 2 onions, chopped 
  • 1 tablespoon grated ginger 
  • 2 stalks lemongrass, chopped 
  • 1 teaspoon ground tumeric 
  • 1 tablespoon ground cumin
  1. Place all the ingredients in a small food processor or blender and process until smooth. Refrigerate for up to 2 weeks. Makes ½ cup.

* Dried shrimp paste is available from Asian grocers.
