peppery gin and blackberry cooler

  • 1 cup (250ml) water 
  • 1 cup (220g) caster (superfine) sugar
  • 2 cups (300g) frozen blackberries 
  • 2 teaspoons peppercorns 
  • 1 teaspoon juniper berries, crushed
  • 4 strips lemon rind
  • ½ cup (125ml) black raspberry liqueur+
  • ½ cup (125ml) gin 
  • 3 cups (750ml) cold soda water
  • crushed ice, to serve
  1. Place the water, sugar, blackberries, peppercorns, juniper berries and lemon in a small saucepan over high heat. Bring to the boil and cook for 15 minutes or until syrupy. Strain and set aside to cool completely. 
  2. Pour 2 tablespoons of the syrup into each of 6 glasses. Top each with 1 tablespoon of the liqueur and gin. Pour over the soda water and serve with ice. Makes 6
