- 1½ cups (270g) white quinoa
- 2 cups (500ml) water
- ½ teaspoon sea salt flakes
- ¾ cup (180ml) coconut milk
- toasted flaked coconut, to serve
- Place the quinoa, water and salt in a medium saucepan over high heat and bring to the boil. Reduce heat to low, cover with a lid and cook for 15 minutes or until the quinoa is cooked and water has been absorbed.
- Add the coconut milk and stir to combine. Top with toasted coconut to serve. Serves 4.
