coconut quinoa

  • 1½ cups (270g) white quinoa
  • 2 cups (500ml) water
  • ½ teaspoon sea salt flakes 
  • ¾ cup (180ml) coconut milk
  • toasted flaked coconut, to serve
  1. Place the quinoa, water and salt in a medium saucepan over high heat and bring to the boil. Reduce heat to low, cover with a lid and cook for 15 minutes or until the quinoa is cooked and water has been absorbed. 
  2. Add the coconut milk and stir to combine. Top with toasted coconut to serve.  Serves 4.
