chocolate berry layer cake

  • 1 x donna hay ultimate chocolate baking mix
  • 250g raspberries
  1. Prepare the baking mix as per packet instructions. Pour the mixture into a 20cm x 30cm cake tin lined with non-stick baking paper. Bake for 25 minutes or until cooked when tested with a skewer. Cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
  2. Cut the cake into 8 even pieces. Using a bread knife, carefully halve each piece horizontally. Prepare the chocolate ganache icing as per packet instructions and using a palette knife, spread half the icing over half the pieces and sandwich with remaining cake. Spread the remaining icing over the top of each cake and layer with raspberries to serve. Makes 8.
